Ingredients

  • 8 pieces Lamb Chops
  • 2 cups Carrots, chopped
  • 2 cups Potatoes, chopped
  • 1 cup Bell Peppers, chopped
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 cloves Garlic, minced
  • 1 teaspoon Rosemary, chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Season the lamb chops with salt, pepper, and rosemary.
  3. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side.
  4. Place the seared lamb chops on a baking sheet.
  5. In a bowl, toss the chopped vegetables with olive oil, salt, and pepper.
  6. Spread the vegetables around the lamb chops on the baking sheet.
  7. Roast in the oven for 20-25 minutes or until the vegetables are tender and the lamb chops are cooked to your liking.
  8. Serve hot and enjoy!
