Ingredients 

Main Ingredients

  • 500 g Lamb, cubed
  • 2 tablespoon Vegetable oil
  • 1 large Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Madras curry powder
  • 400 ml Coconut milk
  • 1 can Tomatoes, chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 bunch Cilantro, chopped for garnish

Instructions 

  1. Heat the oil in a large pot over medium heat.
  2. Add the chopped onions and cook until golden brown.
  3. Add the garlic and ginger, cook for another 2 minutes.
  4. Add the lamb and cook until browned on all sides.
  5. Stir in the Madras curry powder and cook for 1 minute.
  6. Add the chopped tomatoes, coconut milk, salt, and pepper. Bring to a boil.
  7. Reduce heat, cover, and simmer for 45 minutes or until the lamb is tender.
  8. Garnish with chopped cilantro before serving.
