Ingredients

  • 1 kg lamb shoulder, cut into chunks
  • 1 butternut squash, peeled and cubed
  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoon chopped fresh parsley for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add the lamb chunks and brown on all sides.
  2. Add the chopped onion and garlic to the pot. Cook until the onion is translucent.
  3. Stir in the cumin, coriander, paprika, salt, and pepper. Cook for another minute.
  4. Add the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 1 hour.
  5. Add the butternut squash cubes to the pot. Continue to simmer for another 30 minutes, or until the squash is tender.
  6. Garnish with chopped fresh parsley before serving.
