Leftover Lamb Curry Recipe

Main Ingredients
- 2 cups Leftover lamb, diced
- 1 large Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, grated
- 2 tablespoon Curry powder
- 1 can Tomatoes, diced
- 1 cup Coconut milk
- 1 cup Water
- to taste Salt
- to taste Pepper
- 1 handful Cilantro, chopped for garnish
1. Heat a large pot over medium heat. Add a bit of oil.
2. Add the chopped onion, garlic, and ginger. Cook until the onion is soft.
3. Stir in the curry powder and cook for another minute.
4. Add the diced tomatoes, coconut milk, and water. Bring to a simmer.
5. Add the leftover lamb. Simmer for about 20 minutes.
6. Season with salt and pepper to taste.
7. Garnish with chopped cilantro before serving.
