Leftover Leg of Lamb Stew

Main Ingredients
- 2 cups Leftover leg of lamb cubed
- 1 large Onion diced
- 2 cloves Garlic minced
- 3 cups Beef broth
- 2 cups Mixed vegetables carrots, peas, and potatoes
- 1 teaspoon Dried thyme
- 1 teaspoon Dried rosemary
- to taste Salt and pepper
Heat the large pot over medium heat and add a bit of oil.
Add the diced onion and minced garlic, cook until softened.
Add the cubed leftover lamb and cook until browned.
Pour in the beef broth and bring to a simmer.
Add the mixed vegetables, thyme, and rosemary. Simmer for 30 minutes.
Season with salt and pepper to taste. Serve hot.
