Ingredients

  • 2 cups Leftover leg of lamb cubed
  • 1 large Onion diced
  • 2 cloves Garlic minced
  • 3 cups Beef broth
  • 2 cups Mixed vegetables carrots, peas, and potatoes
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • to taste Salt and pepper

Instructions 

  1. Heat the large pot over medium heat and add a bit of oil.
  2. Add the diced onion and minced garlic, cook until softened.
  3. Add the cubed leftover lamb and cook until browned.
  4. Pour in the beef broth and bring to a simmer.
  5. Add the mixed vegetables, thyme, and rosemary. Simmer for 30 minutes.
  6. Season with salt and pepper to taste. Serve hot.
