Main Ingredients
- 1 cup Lentils rinsed
- 1 large Onion chopped
- 2 cloves Garlic minced
- 2 carrots Carrots sliced
- 1 stalk Celery chopped
- 6 cups Vegetable Broth
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt and Pepper
1. Heat a large pot over medium heat. Add a splash of oil and sauté the onions until translucent.
2. Add the garlic, carrots, and celery. Cook for another 5 minutes.
3. Stir in the lentils, vegetable broth, cumin, and paprika. Bring to a boil.
4. Reduce heat and let it simmer for about 30-35 minutes, or until lentils are tender.
5. Season with salt and pepper to taste. Serve hot.
