Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 carrots Carrots sliced
  • 1 stalk Celery chopped
  • 6 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil and sauté the onions until translucent.
  2. 2. Add the garlic, carrots, and celery. Cook for another 5 minutes.
  3. 3. Stir in the lentils, vegetable broth, cumin, and paprika. Bring to a boil.
  4. 4. Reduce heat and let it simmer for about 30-35 minutes, or until lentils are tender.
  5. 5. Season with salt and pepper to taste. Serve hot.
