Low Carb Chicken and Mushroom Soup

Main Ingredients
- 2 tablespoon Olive Oil
- 1 lb Chicken Breast cut into bite-sized pieces
- 8 oz Mushrooms sliced
- 1 medium Onion diced
- 3 cloves Garlic minced
- 4 cups Chicken Broth
- 1 cup Heavy Cream
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 1 teaspoon Thyme dried
Heat olive oil in a large pot over medium heat.
Add chicken and cook until browned. Remove and set aside.
In the same pot, add onions and garlic. Sauté until fragrant.
Add mushrooms and cook until tender.
Return chicken to the pot. Pour in chicken broth and bring to a boil.
Reduce heat and simmer for 20 minutes.
Stir in heavy cream, salt, pepper, and thyme. Simmer for another 5 minutes.
Serve hot and enjoy!
