Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, diced
  • 1 cup Celery, diced
  • 1 cup Carrots, diced
  • 3 cloves Garlic, minced
  • 2 cups Potatoes, diced
  • 1 can Diced Tomatoes
  • 2 cups Clam Juice
  • 2 cups Chicken Broth
  • 2 cans Clams, chopped
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrots. Cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute.
  4. Add potatoes, diced tomatoes, clam juice, and chicken broth. Bring to a boil.
  5. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  6. Add clams, thyme, oregano, salt, and pepper. Simmer for another 10 minutes.
  7. Stir in fresh parsley before serving.
