- 2 tablespoon Olive Oil
- 1 cup Onion, diced
- 1 cup Celery, diced
- 1 cup Carrots, diced
- 3 cloves Garlic, minced
- 2 cups Potatoes, diced
- 1 can Diced Tomatoes
- 2 cups Clam Juice
- 2 cups Chicken Broth
- 2 cans Clams, chopped
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ cup Fresh Parsley, chopped
Heat olive oil in a large pot over medium heat.
Add onion, celery, and carrots. Cook until softened, about 5 minutes.
Add garlic and cook for another minute.
Add potatoes, diced tomatoes, clam juice, and chicken broth. Bring to a boil.
Reduce heat and simmer until potatoes are tender, about 20 minutes.
Add clams, thyme, oregano, salt, and pepper. Simmer for another 10 minutes.
Stir in fresh parsley before serving.
