Ingredients 

Matzo Balls

  • 1 cup matzo meal
  • 4 eggs beaten
  • ¼ cup chicken fat or oil melted
  • ¼ cup chicken broth or water
  • 1 teaspoon salt

Soup

  • 8 cups chicken broth
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 1 onion chopped
  • to taste salt and pepper

Instructions 

  1. In a mixing bowl, combine matzo meal, beaten eggs, melted chicken fat or oil, chicken broth or water, and salt. Mix well and refrigerate for at least 30 minutes.
  2. In a large pot, bring chicken broth to a boil. Reduce heat to a simmer and add carrots, celery, and onion. Season with salt and pepper to taste.
  3. With wet hands, form matzo ball mixture into balls about the size of a walnut. Drop them into the simmering broth. Cover and cook for 30-40 minutes, until matzo balls are cooked through and fluffy.
  4. Serve hot, garnished with fresh dill or parsley if desired.
