Mediterranean Lamb and Lentil Stew

Main Ingredients
- 500 g Lamb shoulder, diced
- 200 g Lentils rinsed
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Olive oil
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- 1 teaspoon Paprika
- 400 g Canned tomatoes diced
- 1 liter Chicken or vegetable broth
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black pepper to taste
- 1 handful Fresh parsley, chopped for garnish
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until softened.
3. Add the diced lamb and cook until browned on all sides.
4. Stir in the ground cumin, ground coriander, and paprika, and cook for another minute.
5. Add the lentils, canned tomatoes, and broth. Bring to a boil.
6. Reduce the heat to low, cover, and simmer for about 1 hour, or until the lentils and lamb are tender.
7. Season with salt and black pepper to taste.
8. Garnish with fresh parsley before serving.
