Ingredients

  • 1 lb Shrimp, cooked and peeled
  • 1 cup Tomato juice
  • ½ cup Ketchup
  • ¼ cup Lime juice, fresh
  • 1 Cucumber, diced
  • 1 Avocado, diced
  • ½ Red onion, finely chopped
  • 1 Jalapeño, finely chopped
  • ¼ cup Cilantro, chopped
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. In a large mixing bowl, combine the tomato juice, ketchup, and lime juice.
  2. 2. Add the cooked shrimp, cucumber, avocado, red onion, jalapeño, and cilantro. Stir gently to combine.
  3. 3. Season with salt and pepper to taste.
  4. 4. Chill in the refrigerator for at least 30 minutes before serving.
