- 1 rack Lamb Frenched
- 1 cup Fresh mint leaves
- 2 cloves Garlic Minced
- 1 cup Breadcrumbs
- ¼ cup Olive oil
- to taste Salt and pepper
Preheat your oven to 400°F (200°C).
Season the lamb rack with salt and pepper.
In a food processor, combine mint leaves, garlic, breadcrumbs, and olive oil. Pulse until it forms a coarse paste.
Press the mint mixture onto the lamb rack, covering it evenly.
Place the lamb on a baking sheet and roast in the preheated oven for 25 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
Let the lamb rest for 10 minutes before slicing and serving.
