Ingredients

  • 2 cups Tomatoes, chopped
  • 1 cup Fresh mint leaves, chopped
  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Heat the olive oil in a saucepan over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped tomatoes, salt, and pepper. Cook until the tomatoes break down, about 10 minutes.
  4. Remove from heat and let it cool slightly.
  5. Transfer the mixture to a blender, add the chopped mint leaves, and blend until smooth.
  6. Return the sauce to the saucepan and heat through before serving.
