Main Ingredients
- 1 kg Lamb shoulder, cut into chunks
- 1 Large onion, chopped
- 3 cloves Garlic, minced
- 1 teaspoon Ground cumin
- 1 teaspoon Ground cinnamon
- 1 teaspoon Ground ginger
- 1 cup Dried apricots, halved
- 2 cups Chicken broth
- 1 tablespoon Honey
- 1 tablespoon Olive oil
- to taste Salt and pepper
- 2 tablespoon Fresh cilantro, chopped for garnish
Heat olive oil in a large pot over medium heat.
Add lamb chunks and brown on all sides. Remove and set aside.
In the same pot, add onion and garlic. Cook until softened.
Stir in cumin, cinnamon, and ginger. Cook for 1 minute.
Return lamb to the pot. Add apricots, chicken broth, and honey. Stir well.
Bring to a boil, then reduce heat and simmer for 1.5 hours, or until lamb is tender.
Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
