Ingredients

  • 2 tablespoon Butter
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 cup Red Lentils rinsed
  • 4 cups Chicken Broth
  • 1 cup Coconut Milk
  • 1 large Apple, peeled and chopped
  • 1 tablespoon Lemon Juice
  • to taste Salt and Pepper

Instructions 

  1. 1. Melt butter in a large pot over medium heat. Add chopped onion and garlic, and sauté until softened.
  2. 2. Stir in curry powder, ground cumin, and ground coriander. Cook for another minute.
  3. 3. Add red lentils, chicken broth, and coconut milk. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. 4. Add chopped apple and cook for another 10 minutes, until apple is tender.
  5. 5. Stir in lemon juice, and season with salt and pepper to taste. Serve hot.
