Ingredients

  • ½ cup Vegetable Oil
  • ½ cup All-purpose Flour
  • 1 cup Chopped Onion
  • 1 cup Chopped Bell Pepper
  • 1 cup Chopped Celery
  • 4 cloves Garlic, minced
  • 1 lb Andouille Sausage, sliced
  • 1 lb Shrimp, peeled and deveined
  • 1 lb Crabmeat
  • 1 quart Chicken Stock
  • 2 cups Okra, sliced
  • 2 teaspoon Creole Seasoning
  • 2 teaspoon Worcestershire Sauce
  • 2 cups Cooked White Rice

Instructions 

  1. 1. Heat the oil in a large pot over medium heat. Gradually stir in the flour, and cook, stirring constantly, until the mixture turns a deep brown color to make a roux.
  2. 2. Stir in the onion, bell pepper, celery, and garlic; cook until tender.
  3. 3. Add the sausage, shrimp, and crabmeat; cook for about 5 minutes.
  4. 4. Pour in the chicken stock, and add the okra, Creole seasoning, and Worcestershire sauce. Bring to a boil, then reduce heat and simmer for 1 hour.
  5. 5. Serve hot over cooked white rice.
