Instructions
Preheat your oven to 400°F (200°C).
In a food processor, combine pistachios, olive oil, garlic, salt, and pepper. Pulse until finely ground.
Press the pistachio mixture onto the lamb rack, covering it evenly.
Place the lamb on a baking sheet and roast for 25 minutes or until the internal temperature reaches 145°F (63°C) for medium-rare.
Let the lamb rest for 10 minutes before slicing and serving.
