  • 1 cup Pistachios Shelled
  • 2 tablespoon Olive Oil
  • 2 cloves Garlic Minced
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper Freshly ground

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a food processor, combine pistachios, olive oil, garlic, salt, and pepper. Pulse until finely ground.
  3. Press the pistachio mixture onto the lamb rack, covering it evenly.
  4. Place the lamb on a baking sheet and roast for 25 minutes or until the internal temperature reaches 145°F (63°C) for medium-rare.
  5. Let the lamb rest for 10 minutes before slicing and serving.
