- 1 lb Ground pork
- 8 pieces Corn tortillas
- 1 cup Enchilada sauce
- 1 cup Shredded cheese
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Olive oil
- to taste Salt and pepper
Preheat oven to 375°F (190°C).
In a frying pan, heat olive oil over medium heat. Add chopped onion and cook until softened.
Add minced garlic and cook for another minute.
Add ground pork, season with salt and pepper, and cook until browned.
Warm tortillas in a microwave or on a skillet to make them pliable.
Fill each tortilla with the pork mixture, roll up, and place seam-side down in a baking dish.
Pour enchilada sauce over the tortillas and sprinkle with shredded cheese.
Bake in preheated oven for 20 minutes or until cheese is melted and bubbly.
