Ingredients

  • 1 lb Pork tenderloin cut into 1-inch medallions
  • 2 tablespoon Olive oil
  • 1 clove Garlic minced
  • ¼ cup Balsamic vinegar
  • 2 tablespoon Capers drained
  • to taste Salt and pepper

Instructions 

  1. 1. Season the pork medallions with salt and pepper.
  2. 2. Heat olive oil in a skillet over medium-high heat.
  3. 3. Add pork medallions and cook for 3-4 minutes on each side, until browned and cooked through.
  4. 4. Remove pork from skillet and set aside.
  5. 5. In the same skillet, add garlic and cook for 1 minute.
  6. 6. Add balsamic vinegar and capers, and cook for another 2-3 minutes.
  7. 7. Return pork to the skillet and coat with the sauce. Serve immediately.
