Ingredients 

Main Ingredients

  • 1 can Corned Beef 12 oz can
  • 2 medium Potatoes peeled and diced
  • 1 medium Onion chopped
  • 1 clove Garlic minced
  • 1 cup Tomato Sauce
  • 1 cup Water
  • 1 cup Frozen Mixed Vegetables
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. 2. Add the diced potatoes and cook for about 5 minutes, stirring occasionally.
  3. 3. Add the canned corned beef, breaking it up with a wooden spoon.
  4. 4. Pour in the tomato sauce and water, and stir to combine.
  5. 5. Add the frozen mixed vegetables, salt, and black pepper. Bring the stew to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  6. 6. Serve hot and enjoy!
