  • 1 rack lamb
  • 1 cup blueberries
  • 0.25 cup balsamic vinegar
  • 0.25 cup honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Season the rack of lamb with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear the lamb on all sides until browned.
  4. Transfer the lamb to a baking dish and roast in the oven for 15-20 minutes.
  5. In the same skillet, add garlic and cook until fragrant.
  6. Add blueberries, balsamic vinegar, and honey. Simmer until the sauce thickens.
  7. Serve the lamb with the blueberry sauce drizzled on top.
