Ingredients

  • 1.5 kg Lamb Leg
  • 4 Carrots peeled and chopped
  • 4 Parsnips peeled and chopped
  • 2 Onions quartered
  • 4 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • 1 tablespoon Rosemary chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Rub the lamb leg with olive oil, minced garlic, rosemary, salt, and black pepper.
  3. Place the lamb in a roasting pan and surround it with the chopped vegetables.
  4. Roast in the preheated oven for about 90 minutes, or until the lamb is cooked to your desired doneness.
  5. Let the lamb rest for 10 minutes before carving. Serve with the roasted vegetables.
