Ingredients

  • 2 racks Lamb Frenched
  • 2 tablespoon Olive Oil
  • 4 cloves Garlic minced
  • 1 tablespoon Rosemary chopped
  • 1 tablespoon Thyme chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. Season the lamb racks with salt and pepper.
  3. In a small bowl, mix together olive oil, garlic, rosemary, and thyme.
  4. Rub the herb mixture all over the lamb racks.
  5. Place the lamb racks in a roasting pan, fat side up.
  6. Roast in the preheated oven for 25 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  7. Remove from the oven and let rest for 10 minutes before slicing.
