Rotisserie Chicken Noodle Soup

Main Ingredients
- 1 Rotisserie chicken, shredded
- 8 cups Chicken broth
- 2 cups Carrots, sliced
- 2 cups Celery, sliced
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Dried thyme
- 1 teaspoon Dried parsley
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black pepper to taste
- 2 cups Egg noodles
1. In a large pot, heat a bit of oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
2. Pour in the chicken broth and bring to a boil.
3. Add the shredded rotisserie chicken, thyme, parsley, salt, and pepper. Reduce heat and let simmer for 10 minutes.
4. Add the egg noodles and cook until tender, about 7-8 minutes.
5. Taste and adjust seasoning if needed. Serve hot.
