Ingredients 

Main Ingredients

  • 1 Rotisserie chicken, shredded
  • 8 cups Chicken broth
  • 2 cups Carrots, sliced
  • 2 cups Celery, sliced
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper to taste
  • 2 cups Egg noodles

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
  2. 2. Pour in the chicken broth and bring to a boil.
  3. 3. Add the shredded rotisserie chicken, thyme, parsley, salt, and pepper. Reduce heat and let simmer for 10 minutes.
  4. 4. Add the egg noodles and cook until tender, about 7-8 minutes.
  5. 5. Taste and adjust seasoning if needed. Serve hot.
