  • 1 lb salmon fillet skinless
  • 1 sheet puff pastry thawed
  • 1 tablespoon Dijon mustard
  • 1 egg beaten
  • 1 tablespoon olive oil
  • 1 cup spinach fresh
  • 1 clove garlic minced

Instructions 

  1. 1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2. Heat olive oil in a pan over medium heat. Add minced garlic and spinach. Cook until spinach is wilted. Set aside to cool.
  3. 3. Roll out the puff pastry on a floured surface. Spread Dijon mustard in the center.
  4. 4. Place the salmon fillet on top of the mustard. Spread the cooked spinach over the salmon.
  5. 5. Fold the puff pastry over the salmon, sealing the edges. Brush with beaten egg.
  6. 6. Place the wrapped salmon on the prepared baking sheet. Bake for 25 minutes or until the pastry is golden brown.
  7. 7. Let it rest for a few minutes before slicing. Serve warm.
