Ingredients

  • 1 lb Italian sausage casings removed
  • 4 cups chicken broth
  • 3 cups potatoes peeled and diced
  • 2 cups kale chopped
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
  2. 2. In the same pot, add the onion and garlic. Cook until softened.
  3. 3. Add the chicken broth and potatoes. Bring to a boil, then reduce to a simmer. Cook until potatoes are tender, about 15 minutes.
  4. 4. Return the sausage to the pot, add the kale, and cook for another 5 minutes. Season with salt and pepper.
