She Crab Soup

Ingredients 

Main Ingredients

  • 1 cup Crab meat fresh or canned
  • 1 cup Heavy cream
  • 2 tablespoons Butter
  • 1 cup Milk
  • 1 cup Fish stock
  • 1 tablespoon Flour
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 2 tablespoons Sherry

Instructions 

  1. Melt butter in a large pot over medium heat.
  2. Add flour and whisk until smooth. Cook for 1-2 minutes.
  3. Gradually add milk and fish stock, whisking constantly until thickened.
  4. Add heavy cream and bring to a simmer.
  5. Stir in crab meat, salt, and pepper. Simmer for 10 minutes.
  6. Add sherry and cook for another 5 minutes.
  7. Serve hot, garnished with a sprinkle of fresh parsley if desired.
