Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 cup Cooked rice
  • 1 cup Black beans, drained and rinsed
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded cheese
  • 4 large Flour tortillas

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the shrimp, chili powder, and cumin. Cook until shrimp are pink and opaque, about 4-5 minutes.
  3. 3. Warm the tortillas in a dry skillet or microwave.
  4. 4. Assemble the burritos by layering rice, black beans, shrimp, lettuce, tomatoes, and cheese on each tortilla.
  5. 5. Roll up the tortillas, folding in the sides as you go.
  6. 6. Serve immediately and enjoy!
