Shrimp Egg Rolls

Main Ingredients
- 1 lb Shrimp peeled and deveined
- 2 cups Cabbage shredded
- 1 cup Carrots shredded
- 1 tablespoon Soy Sauce
- 1 teaspoon Ginger minced
- 1 teaspoon Garlic minced
- 12 Egg Roll Wrappers
- 1 cup Vegetable Oil for frying
1. In a mixing bowl, combine shrimp, cabbage, carrots, soy sauce, ginger, and garlic.
2. Place about 2 tablespoons of the mixture in the center of each egg roll wrapper. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the edges with a bit of water.
3. Heat the vegetable oil in a frying pan over medium heat. Fry the egg rolls in batches until golden brown and crispy, about 2-3 minutes per side.
4. Remove and drain on paper towels. Serve hot with your favorite dipping sauce.
