Slow Cooker Beef Bourguignon

Ingredients 

Main Ingredients

  • 2 lbs Beef chuck, cut into 1-inch cubes
  • 1 cup Red wine
  • 2 cups Beef broth
  • 1 Onion, chopped
  • 3 Carrots, sliced
  • 4 Garlic cloves, minced
  • 2 tablespoon Tomato paste
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 oz Mushrooms, sliced
  • 2 tablespoon Olive oil

Instructions 

  1. 1. Heat olive oil in a skillet over medium-high heat. Brown the beef in batches, then transfer to the slow cooker.
  2. 2. In the same skillet, add onions, carrots, and garlic. Cook until softened, then add tomato paste and cook for another minute.
  3. 3. Pour in red wine, scraping up any browned bits from the bottom of the skillet. Transfer to the slow cooker.
  4. 4. Add beef broth, thyme, salt, and pepper to the slow cooker. Stir to combine.
  5. 5. Cover and cook on low for 8 hours, or until beef is tender.
  6. 6. In the last 30 minutes of cooking, add the mushrooms.
  7. 7. Serve hot, garnished with fresh parsley if desired.
