- 1 lb beef stew meat cut into bite-sized pieces
- 8 oz mushrooms sliced
- 1 cup pearl barley
- 1 onion chopped
- 3 cloves garlic minced
- 8 cups beef broth
- 2 teaspoon dried thyme
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
1. In a slow cooker, combine beef, mushrooms, barley, onion, garlic, and beef broth.
2. Stir in thyme, salt, and black pepper.
3. Cover and cook on low for 8 hours, or until beef and barley are tender.
4. Adjust seasoning with additional salt and pepper if needed before serving.
