Ingredients 

Main Ingredients

  • 2 pounds corned beef brisket with spice packet
  • 8 slices rye bread
  • 8 slices Swiss cheese
  • 1 cup sauerkraut drained
  • ½ cup Russian dressing

Instructions 

  1. Place corned beef brisket in slow cooker, add spice packet, and cover with water. Cook on low for 8 hours.
  2. Remove corned beef from slow cooker, let cool slightly, and slice thinly.
  3. Preheat skillet over medium heat. Butter one side of each slice of bread.
  4. On the unbuttered side of 4 slices, layer Swiss cheese, corned beef, sauerkraut, and Russian dressing. Top with remaining bread slices, buttered side out.
  5. Grill sandwiches in skillet until bread is golden brown and cheese is melted, about 3-4 minutes per side.
