Main Ingredients
- 2 lbs oxtail
- 1 large onion chopped
- 3 cloves garlic minced
- 2 cups beef broth
- 1 cup carrots sliced
- 1 cup celery sliced
- 2 tablespoon tomato paste
- 1 teaspoon thyme dried
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon olive oil
1. Heat the olive oil in a large skillet over medium-high heat. Brown the oxtail on all sides.
2. Transfer the oxtail to the slow cooker. Add the onion, garlic, carrots, celery, beef broth, tomato paste, thyme, salt, and pepper.
3. Cover and cook on low for 8 hours, or until the oxtail is tender.
4. Serve hot, garnished with fresh herbs if desired.
