Ingredients 

Main Ingredients

  • 6 cups potatoes, peeled and diced
  • 1 cup onion, chopped
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese for garnish
  • ½ cup chopped green onions for garnish
  • ½ cup bacon bits for garnish

Instructions 

  1. 1. Add potatoes, onion, and chicken broth to the slow cooker.
  2. 2. Cook on low for 6-8 hours or until potatoes are tender.
  3. 3. Use an immersion blender to blend the soup until smooth.
  4. 4. Stir in heavy cream, salt, and pepper. Cook for an additional 30 minutes.
  5. 5. Serve hot, garnished with cheddar cheese, green onions, and bacon bits.
