Ingredients

  • 2 pounds Corned Beef Brisket
  • 8 slices Rye Bread
  • 1 cup Sauerkraut
  • 4 slices Swiss Cheese
  • ½ cup Thousand Island Dressing

Instructions 

  1. Preheat your smoker to 225°F (107°C).
  2. Place the corned beef brisket in the smoker and cook for about 2 hours or until the internal temperature reaches 190°F (88°C).
  3. Remove the brisket from the smoker and let it rest for 15 minutes.
  4. Thinly slice the smoked corned beef against the grain.
  5. Assemble the sandwiches: Spread Thousand Island dressing on one side of each slice of rye bread. Layer with Swiss cheese, sauerkraut, and smoked corned beef. Top with another slice of rye bread.
  6. Serve immediately and enjoy!
