Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the chopped bell peppers, paprika, and cayenne pepper. Cook for 5 more minutes.
Pour in the fish stock and diced tomatoes. Bring to a boil.
Reduce the heat and let it simmer for 10 minutes.
Add the fish chunks and cook until the fish is cooked through, about 5-7 minutes.
Season with salt and black pepper to taste.
Garnish with chopped fresh parsley before serving.
