Ingredients 

Main Ingredients

  • 1 lb White Fish Fillets cut into chunks
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Red Bell Pepper chopped
  • 1 Green Bell Pepper chopped
  • 1 teaspoon Paprika
  • 1 teaspoon Cayenne Pepper
  • 4 cups Fish Stock
  • 1 can Diced Tomatoes
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 tablespoon Fresh Parsley chopped, for garnish

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the chopped bell peppers, paprika, and cayenne pepper. Cook for 5 more minutes.
  5. Pour in the fish stock and diced tomatoes. Bring to a boil.
  6. Reduce the heat and let it simmer for 10 minutes.
  7. Add the fish chunks and cook until the fish is cooked through, about 5-7 minutes.
  8. Season with salt and black pepper to taste.
  9. Garnish with chopped fresh parsley before serving.
