Main Ingredients
- 500 g Pork shoulder, cubed
- 2 tablespoon Vegetable oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 tablespoon Ginger, grated
- 2 tablespoon Curry powder
- 1 teaspoon Chili powder
- 400 ml Coconut milk
- 1 cup Chicken broth
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 2 tablespoon Fresh cilantro, chopped for garnish
1. Heat the oil in a large pot over medium heat.
2. Add the chopped onion and cook until translucent.
3. Add the garlic and ginger, cook for another minute.
4. Add the pork cubes and cook until browned on all sides.
5. Stir in the curry powder and chili powder, cook for 2 minutes.
6. Pour in the coconut milk and chicken broth, bring to a simmer.
7. Season with salt and pepper, cover and cook for 30 minutes.
8. Garnish with fresh cilantro before serving.
