Ingredients 

Main Ingredients

  • 4 lamb shanks
  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup stout beer
  • 2 tablespoon tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 325°F (165°C).
  2. Heat the olive oil in a Dutch oven over medium-high heat. Brown the lamb shanks on all sides, then remove and set aside.
  3. Add the onion, carrots, and garlic to the pot. Cook until softened.
  4. Stir in the tomato paste, then add the stout beer and beef broth. Bring to a simmer.
  5. Return the lamb shanks to the pot. Add the bay leaves and thyme. Season with salt and pepper.
  6. Cover and transfer to the oven. Braise for about 3 hours, or until the meat is tender and falling off the bone.
  7. Remove the bay leaves before serving. Enjoy!
