Ingredients 

Main Ingredients

  • 1 kg Leg of lamb boneless
  • 2 cloves Garlic minced
  • 1 cup Spinach chopped
  • ½ cup Feta cheese crumbled
  • 1 tablespoon Olive oil
  • 1 teaspoon Oregano dried
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Preheat your oven to 180°C (350°F).
  2. Butterfly the leg of lamb and lay it flat.
  3. In a bowl, mix the garlic, spinach, feta cheese, olive oil, oregano, salt, and pepper.
  4. Spread the mixture over the lamb, then roll it up and tie with string.
  5. Place the lamb in a roasting pan and roast for about 2 hours, or until the internal temperature reaches 60°C (140°F).
  6. Let the lamb rest for 15 minutes before slicing and serving.
