Ingredients

  • 1 piece Leg of lamb boneless
  • 2 cups Breadcrumbs
  • 1 cup Feta cheese crumbled
  • 2 cloves Garlic minced
  • 1 tablespoon Rosemary chopped
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix breadcrumbs, feta cheese, garlic, rosemary, and olive oil. Season with salt and pepper.
  3. Lay the leg of lamb flat and spread the stuffing mixture evenly over the surface.
  4. Roll the lamb up and tie it with kitchen twine to secure.
  5. Place the lamb in a roasting pan and roast for about 90 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  6. Let the lamb rest for 15 minutes before slicing and serving.
