Ingredients

  • 4 pork chops bone-in, about 1 inch thick
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tablespoon fresh parsley chopped
  • 1 egg beaten
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine breadcrumbs, Parmesan cheese, parsley, and beaten egg. Mix well.
  3. Cut a pocket into each pork chop and stuff with the breadcrumb mixture. Secure with toothpicks if necessary.
  4. Heat olive oil in a skillet over medium-high heat. Sear the pork chops on both sides until browned, about 3-4 minutes per side.
  5. Transfer the pork chops to a baking dish and bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Let the pork chops rest for a few minutes before serving. Enjoy!
