Ingredients

  • 1 lb Pork tenderloin
  • 1 cup Bread crumbs
  • 1 cup Spinach, chopped
  • 1 cup Feta cheese, crumbled
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the pork tenderloin by slicing it down the middle, but not all the way through. Open it up and flatten it out.
  3. In a bowl, mix together the bread crumbs, spinach, feta cheese, garlic, and olive oil. Season with salt and pepper.
  4. Spread the mixture evenly over the pork tenderloin. Roll it up and tie it with string to secure.
  5. Place the rolled tenderloin in a baking dish and bake for 40 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Let it rest for 10 minutes before slicing and serving.
