Ingredients 

Main Ingredients

  • 2 cups Cooked chicken, shredded
  • 1 cup Cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup Bell peppers, diced
  • 1 cup Onions, diced
  • 8 pieces Flour tortillas
  • 2 tablespoons Olive oil

Instructions 

  1. 1. Heat a skillet over medium heat and add olive oil.
  2. 2. Add diced onions and bell peppers, cook until softened.
  3. 3. Add shredded chicken to the skillet and mix well.
  4. 4. Place a tortilla in another skillet over medium heat.
  5. 5. Sprinkle a mix of cheddar and Monterey Jack cheese on the tortilla.
  6. 6. Add the chicken mixture on top of the cheese.
  7. 7. Place another tortilla on top and cook until the bottom tortilla is golden brown.
  8. 8. Flip the quesadilla and cook until the other side is golden brown and the cheese is melted.
  9. 9. Remove from the skillet, cut into wedges, and serve.
