Instructions
1. In a pot, heat a bit of oil and sauté garlic, ginger, and red curry paste until fragrant.
2. Add coconut milk and chicken broth. Bring to a simmer.
3. Add mushrooms and cook for 5 minutes.
4. Add cooked chicken, fish sauce, lime juice, and sugar. Simmer for another 5 minutes.
5. Garnish with chopped cilantro and serve hot.
