Ingredients 

Main Ingredients

  • 2 cups Coconut Milk
  • 2 cups Chicken Broth
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Lime Juice
  • 1 teaspoon Sugar
  • 1 cup Mushrooms, sliced
  • 1 cup Chicken, cooked and shredded
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 tablespoon Red Curry Paste
  • 1 tablespoon Cilantro, chopped

Instructions 

  1. 1. In a pot, heat a bit of oil and sauté garlic, ginger, and red curry paste until fragrant.
  2. 2. Add coconut milk and chicken broth. Bring to a simmer.
  3. 3. Add mushrooms and cook for 5 minutes.
  4. 4. Add cooked chicken, fish sauce, lime juice, and sugar. Simmer for another 5 minutes.
  5. 5. Garnish with chopped cilantro and serve hot.
