Ukrainian Red Borscht Soup Recipe
A traditional Ukrainian beet soup, hearty and flavorful.

Main Ingredients
- 2 medium beets peeled and grated
- 1 medium carrot peeled and grated
- 1 medium onion chopped
- 3 cups cabbage shredded
- 3 medium potatoes peeled and cubed
- 6 cups beef or vegetable broth
- 2 tablespoon tomato paste
- 2 cloves garlic minced
- to taste salt and pepper
- 2 tablespoon vinegar
- to serve sour cream
- to serve fresh dill chopped
1. In a large pot, bring the broth to a boil.
2. Add the beets, carrots, and potatoes. Cook for 15 minutes.
3. Add the cabbage, onion, and tomato paste. Cook for another 20 minutes.
4. Add the garlic, vinegar, salt, and pepper. Cook for 5 more minutes.
5. Serve hot, garnished with sour cream and fresh dill.
