Ingredients

  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 8 cups water
  • 2 tablespoon soy sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of water or oil and sauté the onion and garlic until softened.
  2. 2. Add the mushrooms, carrots, and celery. Cook for about 5 minutes, stirring occasionally.
  3. 3. Pour in the water, soy sauce, thyme, rosemary, and pepper. Bring to a boil.
  4. 4. Reduce heat and let it simmer for about 1 hour.
  5. 5. Strain the broth through a strainer to remove the solids. Serve hot or store for later use.
