- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 cups carrots, chopped
- 2 cups celery, chopped
- 8 cups water
- 2 tablespoon soy sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon pepper
1. Heat a large pot over medium heat. Add a splash of water or oil and sauté the onion and garlic until softened.
2. Add the mushrooms, carrots, and celery. Cook for about 5 minutes, stirring occasionally.
3. Pour in the water, soy sauce, thyme, rosemary, and pepper. Bring to a boil.
4. Reduce heat and let it simmer for about 1 hour.
5. Strain the broth through a strainer to remove the solids. Serve hot or store for later use.
