Ingredients

  • 1 lb Beef Stew Meat cut into bite-sized pieces
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 4 cups Beef Broth
  • 1 can Diced Tomatoes
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, brown the beef stew meat over medium heat.
  2. 2. Add the chopped onion and minced garlic, cook until softened.
  3. 3. Pour in the beef broth and diced tomatoes.
  4. 4. Add the sliced carrots, diced potatoes, and sliced celery.
  5. 5. Stir in the dried thyme and basil. Season with salt and pepper to taste.
  6. 6. Bring to a boil, then reduce heat and let simmer for about 1 hour, or until vegetables are tender.
