Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, sliced
  • 2 stalks Celery, sliced
  • 1 Zucchini, chopped
  • 1 can Diced tomatoes (14.5 oz)
  • 4 cups Vegetable broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried basil
  • 1 cup Green beans, chopped
  • 1 cup Corn kernels
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Add carrots, celery, and zucchini. Cook for about 5 minutes.
  4. Stir in diced tomatoes, vegetable broth, thyme, and basil. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add green beans and corn. Simmer for another 5 minutes.
  7. Season with salt and pepper to taste. Serve hot.
