Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic, cook until softened.
Add carrots, celery, and zucchini. Cook for about 5 minutes.
Stir in diced tomatoes, vegetable broth, thyme, and basil. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Add green beans and corn. Simmer for another 5 minutes.
Season with salt and pepper to taste. Serve hot.
