Ingredients 

Main Ingredients

  • 200 g vermicelli noodles
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • ½ cup fresh herbs (mint, cilantro, basil)
  • ¼ cup crushed peanuts
  • ¼ cup soy sauce
  • 2 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 clove garlic, minced

Instructions 

  1. 1. Cook vermicelli noodles according to package instructions. Drain and set aside.
  2. 2. In a mixing bowl, combine soy sauce, lime juice, fish sauce, sugar, and minced garlic. Stir until sugar is dissolved.
  3. 3. In a large bowl, combine cooked noodles, shredded carrots, cucumber, and fresh herbs. Pour the dressing over and toss to combine.
  4. 4. Serve in bowls, topped with crushed peanuts.
