Ingredients 

Main Ingredients

  • 4 cups leeks, white and light green parts only, cleaned and chopped
  • 2 cups potatoes, peeled and diced
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • to taste salt and white pepper

Instructions 

  1. 1. In a large pot, melt butter over medium heat. Add leeks and onions, cook until soft.
  2. 2. Add potatoes and chicken broth. Bring to a boil, then simmer for 20 minutes.
  3. 3. Puree the soup in a blender until smooth. Let it cool, then stir in the cream.
  4. 4. Chill in the refrigerator for at least 2 hours. Serve cold, seasoned with salt and white pepper.
